Elderflower & Lemon syrup

I picked another buch of my friend organic lemons the other day they are so good, I’m going to preserve some, juice some and freeze it in ice cubes and I made this syrup. I had froze some Elderflowers earlier in antisipation of getting more of these gorgeous lemons.

  • 2 Liters lemon juice
  • 8 Elderberry Flower heads (Sambucus nigra)
  • 1 kg Raw Sugar
  • 2 cups White Vinegar

I juiced & strained the lemons and put in pot, I added the flower heads & sugar I then warmed up slowely until all sugar is disolved then I turn heat up to a hard boil I then added the vinegar and boil until reduced for about 20 minutes I then bottled hot.

It is so good I use it as a drink just diluted in water, you could put it in mineral water to make it fizzy, I add it to my Kombucha and Kefir once they are finished,  I drizzled it over a Green Gage fruit crumbles the other night it was lush.
