Hawthorn Sauce

  • 2 kg hawthorn berries (Crataegus monogyna)
  • 1 litre water
  • 1 kg sugar
  • 2 cups vinegar
  • 6 cloves
  • Salt
  • Pepper
  • Chilly
  • Add whatever spices you like.

Cook berries for 15 minutes stirring constantly or it will stick, add extra water if you have to that’s ok

Cool then strain seeds out by pushing through a sieve or putting through a hand food mill

Put back on heat bring to boil add sugar and vinegar & rest of ingredients

Hard boil for 15 min bottle into hot bottles
